Egg pizza

August 26, 2010 § 2 Comments

I am making a few goals as the kids start school next week.  Do not send a boring turkey sandwich to school more than once a week.  Have a nutritious and fun after school snack.  And find another option for breakfast besides cereal.  So I’ve been testing and searching and I love what I have found.

This is what I made for breakfast this morning.  It was quick and easy.  I boiled and toasted while I unloaded the dishwasher.  And then broiled while I loaded the dishwasher.

It was good, but . . .I think I would prefer it with a sunny side up egg instead of a boiled egg.  It needed some moisture and sauceyness.  But it was good and I loved the addition of oregano.  Definitely an option for breakfast.

A bridal shower tea

This past weekend we threw a shower for my sister-in-law Angela.  She will be getting married in November and we wanted to give her a day of sweet and delicious memories.  We ended up having it at her house which made it convenient for her and gave us plenty of room to set up tables, gifts and time with her guests.

Her aunts and cousin did most of the organizing and I was the “chef” for the day.  I really don’t like spending money on tiny sandwiches that can be easily put together in no time at all.  So here is a look at what we made for the shower.

The favors were little mason jars filled with lemon drops and covered in fabric. I printed the tags and then punched them with my circle punch.  I backed them with a piece of yellow scrapbook paper that I punched with a flower punch.  They came out really adorable and were dispalyed like this.

The first part of the shower was everyone gathering in the kitchen for a drink and some cheese and crackers.

The lunch menu included:

  • egg salad sandwiches on wheat bread
  • chicken and apricot salad on rolls
  • caprese salad canapes
  • green salad
  • fruit salad
  • assorted pastries from a local bakery
  • tea, lemonade and wine

We played a simple game of “Price is Right” and then she was showered with beautiful and sentimental gifts.  Her mother gave her a hope chest filled with her china and crystal.  Tears were flowing at this point.

Angela was so happy and thankful for everything.  And it really turned out amazing.  I love celebrating an occasion like this and am looking forward to the wedding.

This week’s menu

Getting back into a more normal schedule for us as the kids head back to school.  I also want to cut back our calories by alot to try and lose some of this holiday weight.  So this is the plan for the week:

Sunday: leftovers. whole wheat pasta, turkey meatballs and homemade sauce. (Haven’t been to the store yet so this will have to do.)

Monday: chicken soup. I’ll share the recipe on Wednesday.

Tuesday: salmon, goat cheese and hummus salad

Wednesday: chicken tostadas (using leftover chicken from Monday)

Thursday: BBQ pork sandwiches with WW apple and carrot slaw

Friday: Homemade pizza; pepperoni and ??

Saturday: eat out or leftover pizza

Planning to do a major clean out of the kitchen this week.  Lots of junk food to get rid of and I need to go back to the things that work for me.  Also lots of healthy snacks for the kids.  I think I’ll bake something to have when they get home from school, some kind of apple cake.  Looking forward to the first week of the new year.

I love food

It’s as simple as that.  I love everything about cuisine.  I love food.  I love eating.  I love cooking.  I love pictures of food.  I can sit and read cookbooks for hours.  I even like going to the grocery store.  Yes, my mom is a fabulous cook.  Yes, my grandmothers spent all day in the kitchen and made everything from scratch.  Yes, I had an easy bake oven as a kid.  I just love food.

So I’m thinking about what I love and what I want to write about and spend time with and the natural answer is food.  So here I am starting a blog that will mix what I know with what I love and my pictures.
